White Noise
Hand harvested bunches were foot stomped then basket pressed. The juice was settled for 48 hours, then racked to barrel. No sulphur or carbon dioxide was used at this stage ā oxidative handling.
A few days after being put to barrel the wild fermentation began and resulted in a slow steady ferment. Wild malo-lactic fermentation began as soon as primary was complete, with the wine resting on gross lees for 12 months. One demi-barrique (112L) French oak barrel was used - no new oak. The wine was racked a couple of times before bottling unfined and unfiltered.
